As @halfvoid mentioned, Sins of a Solar Empire is a great series. Galactic Civilizations (pick a number) sounds 100% like what you are looking for. It is PC-only and you can get is DRM-free on GoG if you prefer that over Steam.
Starbase Orion would be my go-to on iOS and I havenāt found an adequate replacement. If you find something on mobile, let us know.

Sadly I tried like a dozen of scifi 4X games on ios last week, and mostly are ftp scams riddled with the usual crap (I canāt believe there are SO MANY, all almost identical, and apparently all managing to earn money).
On the other end, StarBase Orion is still a unique even if now very old gem (even without a proper grand story).
First oneās great too, and 1/3rd the price. Iāve probably lost well over 100 hours to it, same with the second.
This has already gotten 100x the playtime on my phone that it did on Steam. Such a great little game.
Have been thoroughly enjoying this on mobile lately, played the crap out of it on steam before too.
Similar vibe to Luck be a Landlord but very much itās own game.
I just checked Steam, I ahve like 20 hours in the game, and just tried to play and have no memory of what I am doing here. lol.
Similar to you, I have been tinkering to try Stellaris with a Star Wars or Star Trek mod - but I find Stellaris a little hard to get into.

Back in the days I played it constantly for about a year, both single player and multiplayer.
Now I lost twice already against the easiest AIā¦LOLā¦still learning it all over again.
Despite some little quirks, itās still one of my favorite games ever, and Iām not even a fan of 4X (the only one that I really liked and played before it was the ancient Star Wars Rebellion).
IF anyone is interested Iām down for trying multiplayer, assuming it still works!!!

I had like 20 hours in the game, had totally forgot about it, put another few hours into it last night when @halfvoid brought it up, and now am trying to not play it when i should be working.
In news I was not expecting, Subnautica is coming to Mobile in early July. I canāt imagine this would be my preferred way to play it, but itās an awesome game and Iām not going to pretend Iām not going to buy it before my next long flightā¦
Oooh, Sol Cesto just landed in EA on Steam today. Loved the demo I played in one of the Steamfests a while back.
I also loved the Sol Cesto demo, but Iām kind of glad itās in EA because it gives me an excuse to not buy it till its full release. Too many games!
NH is out on Steam. Looks like it has more armies than the iOS version so Iām guessing thereās no cross compatibility? But it doesnāt specify one way or another, soā¦
ETA: some googling and Polish translation seems to suggest a different dev for the Steam version vs iOS, therefore no cross platform play
Dang. After being switched back to Portal however many years ago, the iOS app has been sitting in limbo with seemingly no attempts to restore its former capabilities other than releasing a brand new army, because why restore what people had already paid for when you can try to get new money, right?
The original was by far a favorite game for me to play with my two friends. Yes, we played 3-player, and yes, it was still awesome. Sadly, along with most of the DLC armies, 3-4 player was removed and had been ācoming soonā for at least 3 years.
